Potato and egg salad

Ingredients: 500g (1lb) new potatoes 1 tbsp chopped parsley 1 tbsp chopped chives or spring onions 100ml (3fl oz) French dressing 1 hard-boiled egg 1 tbsp chopped gherkins 1/2 tbsp chopped capers Method: SCRUB or peel the potatoes and boil in salted wate

Ingredients:

500g (1lb) new potatoes

1 tbsp chopped parsley

1 tbsp chopped chives or spring onions

100ml (3fl oz) French dressing

1 hard-boiled egg

1 tbsp chopped gherkins

1/2 tbsp chopped capers

Method:

SCRUB or peel the potatoes and boil in salted water until cooked.

Drain and chop into chunks, mixing with the French dressing while still hot.

Add the chopped hard-boiled egg with all the other ingredients and toss well.

Great to accompany barbecued meat and green salad.
