Leeks cooked in red wine

Ingredients: 500g (1lb) small leeks, washed and trimmed 2 tbsp olive oil 25g (1oz) unsalted butter 1 glass red wine 2 tbsp stock or water salt to taste Method: Cut the leeks into same-sized short lengths. Heat the oil and butter in a frying pan and add the leeks side by side. As soon as they begin to colour, turn them over. Season with a little salt. Pour over the red wine and stock. Cover and cook for about 10 minutes, then remove the leeks to a warm serving dish and reduce the sauce a little. Pour over the leeks and serve.
