75g (3oz) vanilla sugar, or caster sugar with a few drops of vanilla essence added

1 tbsp apricot brandy

Method

This is a very simple pudding which makes the most of the short apricot season.

It's useful to keep a jar of caster sugar in the cupboard with a vanilla pod buried in it: the vanilla makes the sugar very scented. Enough for four servings.

Cut the apricots in half and remove the stones. Arrange in an open oven-proof dish and coat with the vanilla sugar. Pour over a very little apricot brandy or water. Bake in a slow oven, Gas Mark 2, 150 deg C, 350 deg F, for about an hour or until the apricots are soft. Serve with thick cream.
