The man was approached by two men riding an off-road motorbike as he stopped for a short break between Kneesworth Street and Chestnut Lane.
One of the robbers approached the driver's side window and, showing a dark coloured rifle, demanded money.
The second man took cash from a wallet inside the van.
The two men wore dark leather clothing, dark boots, and dark full face crash helmets and gloves.
Both men got back on the bike and headed towards Kneesworth.
