A CENTREPIECE of Royston’s revamped Fish Hill Square has been transformed into a wine bar.

The vacant former court house has been taken over by Ad Hoc after sitting empty for six months since the Dish Restaurant closed.

Royston based Italian restaurant Palazzo’s proprietor Matthew Norris owns the new wine bar which officially opened on Friday.

General manager Jason Todd said: “It is a different take on what people want in the town that offers something more.”

Ad Hoc employs 15 part-time staff and supports five full-time posts.

The interior has been completely refurbished and features a glass topped wine cellar that descends under a spiral staircase.
