Method
BRUSH the steaks with a little olive oil, season with black pepper and place under a hot grill, turning over when each side is slightly underdone.
Finely chop the shallots and parsley.
Mix the parsley, salt and lemon juice with the softened butter.
As soon as the steaks are ready, heat a small frying pan and put in the butter and shallots, place the steaks on top and cover, leave for about 3 minutes over a very low heat.
Serve immediately with the parsley butter spooned over the steaks.
