650g (1 1/2lb) raspberries

125g (4oz) caster sugar

250g (8oz) strawberries

1 orange

2 tbsps Grand Marnier or orange liqueur

250ml (1/2pt) double cream

Method

HULL and wash the raspberries and strawberries.

Put the raspberries in a serving bowl and sprinkle with sugar, the juice of the orange and the liqueur. Cover and leave in the fridge.

Crush the strawberries and rub through a sieve or blend. Whip the cream lightly and fold into the puréed strawberries.

Pour the cream over the raspberries, cover and chill well before serving.

Sprinkle with a little extra sugar if necessary.

Serves 4-6.
