1/2 medium onion
2 garlic cloves
2 tsp curry paste
black pepper
5 fl oz vegetable oil
Method:
Four medium potatoes make plenty for two or three people. Peel the potatoes and grate using a hand grater or a food processor. Place in a colander and sprinkle with salt. Let them stand for 15 minutes, then dry in paper towels and put in a mixing bowl. Add the cornflour and mix thoroughly. Chop the onions very finely, peel and crush the garlic and add to the bowl with the beaten egg and curry paste and some black pepper. Mix very well. Heat the oil in a large frying pan and add the potato mixture, either in one large flat cake ,or in smaller individual patties. Fry until golden brown for about five minutes, then turn over and cook until brown and crispy. Drain and serve hot - lovely with meat or fish.
