125g (4oz) fresh bean sprouts

Method
WASH the beans and trim the ends, cut the beans into 2in pieces.
Heat the oil in a wok or frying-pan until hot, then add the garlic and ginger, and stir-fry for a few seconds.
Add the green beans and a little stock or water and cook for about five minutes, stirring occasionally, or until the beans are starting to soften, and most of the liquid has evaporated.
Add the bean sprouts and salt and stir-fry for 30 seconds, then serve hot.
