1/2 tsp sugar

small bunch fresh mint

2 tbsps double cream

salt and pepper

Method

Chop the mint very finely. Boil the peas in salted water with half the mint until soft.

Drain well, then beat well with the sugar, cream, butter and the rest of the mint until you have a smooth purée.

Season with salt and pepper if necessary.

Serve hot.
